Savory Quick Chicken! (Only 4 Ingredients!)
I was itching for something different (i.e- something that does not include BBQ sauce, ketchup or steak sauce) and threw these things together hoping it would taste good (and holy cow!), it was fantastic!
Here's what you need:
6-8 boneless, skinless chicken tenderloins (thawed)
1 Tbsp olive oil
Approx 1 cup white wine (I used Riesling Mosel)
Approx 1 cup house vinaigrette dressing (with garlic and cider vinegar. I use the Aldi brand.)
In a large skillet heat 1 Tbsp of olive oil over medium-high heat.
Add chicken tenderloin and brown them, flipping a couple of times to mostly get the meat cooked through.
Lower the heat to medium and pour in white wine. (I assume it was about 1 cup. I had it about 1/2 inch deep in the pan.) Turn the chicken over a couple of times so that it can absorb the flavor on both sides.
As the wine begins to cook away (just before the skillet is completely dry) add approximately 1 cup of house vinaigrette salad dressing. (You'll want it to be about 1/2" deep in the pan.) Flip the chicken around. The sauce will be a little brown and smell ridiculously yummy.
Let this cook down a bit, but NOT dry. You want to have some of the saucy goodness in the bottom of the pan to spoon over the chicken as you serve it. I served it over rice with steamed veggies. (YUM!)
