Customizable Calzone

Customizable Calzone

This is a recipe that my Mom had made for us and you can switch up whatever is inside to match your family's taste. Of course your other option is to do like I did and use 1 pan and make 1 large calzone with different ingredients on each side so that everybody gets exactly what they want! This is definitely a quick meal and you can have it done in half an hour from start to finish.

Here is what you will need:

2 rolls of pizza dough/crust
1 lb of ham (or pepperoni or whatever kind of meat you'd like)
1 1/2 cups shredded mozzarella cheese
1/2 cup of diced peppers (use whatever veggies you'd like if you like veggies!)
1/2 cup of sliced mushrooms
*If you want to dip in pizza sauce or spaghetti sauce, a small jar should be sufficient.

Preheat your oven to whatever temperature is recommended for cooking your pizza crust!

Chop your veggies.

You'll need to use a large rectangular cookie sheet/pan. Roll out 1 of your pizza doughs over the pan. (If your pan has edges like mine, you likely will not be able to get your rolling pin inside of the edges to roll out your dough, so stick a can of soup or something inside of a sandwich bag and roll away! I know, I thought it was pretty clever. ;-)

Now layer up your ingredients. I'll go ahead and say that I made this in 3 different ways. I did a small part with just cheese for Big D, a portion with meat, cheese and mushrooms for Handyman and "supreme" for me. Also, you can make these thicker, but it takes longer to cook through, so I suggest being reasonable with the amount of each ingredient you add. If the calzone ends up being 3 inches thick, the bottom crust will burn before the top crust cooks through.

Now you need to get your other can of pizza dough/crust out, but trying to roll it out on top of the other food just doesn't work well, so pull off a piece of plastic wrap approximately the size of your pan and lay on the counter. Open your pizza dough and roll it out on the plastic wrap.

Now just pick up the plastic wrap and flip the pizza dough on top of the pan to cover the bottom half of the calzone. Don't forget to peel the plastic wrap off.

Now stretch out the top pizza dough and pinch it together with the bottom pizza dough so that all of the meat, cheese and veggies and wrapped inside. Place in the oven for 15-20 minutes. **While it's cooking go ahead and heat up your spaghetti or pizza sauce if you want to have some to dip your calzone in.

After the cook time the calzone should be golden brown on top. Stick a knife in the middle just to make sure that your dough is cooked through.

And here's the final product:
