Honey Baked Chicken

I found this recipe on allrecipes.com and had to try it. It was soooooo good that I had to share. It's going to be a regular meal in our home now. The recipe is titled Honey Baked Chicken II and here's the link:

Big D was helping me in the kitchen that day and the mixture is very kid-friendly, so invite your little ones to come along and participate.

Ingredients:
1 (3 pound) whole chicken, cut into pieces (I used a 3lb package of chicken wings I had picked up on sale)
1/2 cup of butter melted
1/2 cup of honey
1/4 cup prepared mustard
1 tsp salt
1 tsp curry powder



Preheat oven to 350.
The recipe calls for 1/2 cup of melted butter. I usually try to limit our fatty food intake so I only used about 3/4 of a stick of butter rather than an entire stick. Go ahead and cut up the butter and place in a microwave safe bowl and microwave until melted. (It won't take to long, so watch it... usually about 30 seconds for me.)





Pour your butter into a mixing bowl. Go ahead and mix in 1/2 cup of honey.

Now add 1/2 cup of mustard.

Add 1/2 tsp of salt.


Add 1/2 tsp of curry powder.

Mix up all of the ingredients.

Of course I line my pans with aluminum foil to help with clean up. Spray with PAM and place chicken in the pan and pour the mixture over the top. I cover with aluminum foil and placed in the oven.

The instructions say, "Bake in the preheated oven for 1 1/4 hours (75 minutes), basting every 15 minutes with pan drippings, until the chicken is nicely browned and tender and the juices run clear." I'm not a fan of having to run to the oven every 15 minutes, so I actually let it cook for 30 minutes then basted it, then 30 minutes and basted then 15 minutes and basted. It turned out beautifully...






Since I didn't know if Big D would like the chicken, I made two sides that I knew he would eat, so Easy Mac and Green Beans. Yum!
