Baked Sweet Potato Fries

I wish I could take credit for this recipe but it came from my dear friend, Lauren. Since the first time that I made this recipe for my family, it's been a hit. Actually, this is Big D's favorite recipe.  It's so good, that when we get sweet potato fries at restaurants, my family is disappointed that they don't taste like this.

Here's what you'll need:
4-5 sweet potatoes
1 Tbsp olive oil
1 Tbsp dry ranch dressing mix


Preheat your oven to 400.

Peel your sweet potatoes.

Once your potatoes are peeled, start slicing them. I cut mine to about the same thickness of McDonald's fries. The thicker that you cut the fries, the longer it will take to cook.




To speed up the cooking process, I choose to microwave my fries for about 5 minutes; although this is not necessary if you have time to fully cook them in the oven.  If you're going to microwave them, place them in a microwave safe dish and drizzle a little Olive Oil over the top, cover with handi-wrap and cook in microwave for 5 minutes.




Spray a large size cookie sheet with PAM.



Pour your sweet potato fries onto your cookie sheet and spread them out evenly.



Here's where you're going to get all of your flavor. (If you've never cooked foods using the dry ranch dressing mix. I know this sounds crazy, but once you've tried it, I'm guessing you'll be a fan. Obviously we are. I don't buy the little packets any more, I buy the big bottle at Wal-Mart. Yes, on the top it says, 128 servings. :-)

Sprinkle your sweet potato fries with the dry ranch dressing mix. I give it a good dose! I would say maybe a Tablespoon, but whatever it takes to give all of the fries a decent covering.

Throw your pan in the oven to cook them through. If you've microwaved the fries like I've previously suggested, and the fries are already soft (you can easily stick a fork in them) then just cook these about 8 minutes, pull out, flip them over, sprinkle a little more seasoning over them and cook for another 8 minutes. If you didn't microwave them then you may need to cook 15 minutes, flip and cook another 15 minutes. Also, if you've cut the fries thicker, then it will definitely take longer to cook.  Just make sure that you are easily able to stick a fork in the fries and they are cooked through.

Check out the final product. Yummy!
