Baked Salmon Patties

We like salmon patties, but don't like that most recipes call for them to be fried. :-( ... Not heart-healthy! These yummy things can be whipped up and on the table in 20 minutes or less. So, this is basically my mom's recipe although I think I've slightly tweaked it, but here's what you need:

3 small cans of skinless, boneless salmon
2 eggs
5 Tbsp (approximately) of bread crumbs
2 tsp Old Bay Seafood seasoning

Preheat oven to 375.



Open and drain liquid from the cans of salmon. Pour meat into a mixing bowl and flake with a fork.


Add approximately 5 Tbsp bread crumbs.





Break and add 2 eggs. Then add 2 teaspoons of Old Bay seasoning. Mix until all ingredients are blended well together.

Now this is the fun part. This is how you get to bake salmon patties. Pull out 2 muffin tins. Yes, I just said muffin tins. (The recipe makes about 12 small salmon patties, so pull out 2 muffin tins if you have the 6 tin pan, or just 1 pan if you have a super-size pan). Spray them down with PAM or whatever cooking spray you have.
Now scoop a decent spoon full of the salmon mixture into the bottom of each muffin cup and smoosh it down with the back of your spoon to flatten out the patty. You want the patties to be between 1/3 and 1/2 an inch thick.


Once you've used all of your salmon mixture, put your muffin tins in the oven on a middle rack. Bake for 10-15 minutes. You just want to get the tops slightly firm to the touch and golden brown.



Now check these out (served with a side of vegetable casserole and Knorr Rice Sides Brocc & Cheese). We usually dip our salmon patties in either tartar sauce or ketchup.

  4. Can you do these outside a muffin tin and if so what change should be made.

    1. Hi! These can be cooked outside of a muffin tin several ways. You could just form the patties with your hands and place on a cookie sheet and cook the same time as listed above. The traditional southern way is to fry them. You could essentially form the patties, pour vegetable oil in a skillet (not deep frying, but enough oil to keep the bottom of your pan coated while they cook), then fry on med-high heat, turning occasionally until golden brown on each side. I hope you enjoy!

  5. Hello! I made my lunches for the week on sundays. I was thinking of having these on a bed of greens. If I make them on sunday, how long would they last? Also, how many patties are a serving? Do you think they will taste good cold?

    1. Hi Reanna! We regularly eat these with a salad on the side, so I they would be fine on a bed of greens. I'm not sure about how they would taste cold though. To be honest, I've never tried it. I usually get about 12 salmon patties out of the recipe. I tend to eat 2 patties with each meal. As far as how many days they would last refrigerated, the Mayo clinic recommends leftovers be eaten within 3-4 days. (I refer to their site for all health things!) If you end up trying them cold on greens, please let me know what you think!

    3. I ended up having these with zucchini and carrot noodles, mozzarella and fresh tomatoes. I did reheat them with the noodles and they lasted all week! Super yummy

  6. I may try this with cans of pork, but add a few additions...diced onions, diced sweet peppers and other spices.
