Teriyaki and Orange Beef (and Vegetable) Stir Fry
This recipe is the result of throwing some things together and hoping it turned out well. Remarkably it was a hit! :-)
Ingredients:
1 head of fresh broccoli, chopped
3 carrots peeled and thinly sliced (I used and accordion slicer so they would cook quickly)
1/2 small onion, diced
1 can sliced mushroom
2 Tbsp butter
3 Tbsp olive oil
3 Tbsp teriyaki sauce
3/4 cup water
1 lb beef tips cut into small/bite-size pieces
1 Tbsp brown sugar
2 Tbsp orange juice
Directions:
1. In a large skillet over medium heat add 2 Tbsp butter, 1 Tbsp olive oil, 1 Tbsp teriyaki sauce and all of the veggies. Cook for about 10-12 minutes until veggies soften.
2. Once the veggies are cooked, remove them from the pan.
3. Now add 2 Tbsp olive oil, 1 Tbsp teriyaki sauce and beef tips to pan. Brown the meat on both sides for a couple of minutes.
4. Once the meat is browned add 3/4 cup water and sprinkle the meat with brown sugar, stir and add orange juice. Simmer for a while, letting the liquid reduce a bit. Then, mix in the veggies to coat.
We ate ours over white rice and thought it was quite tasty. Hope you enjoy!
